Just like the classic tofu that can be sliced, baked or scrambled, hemp tofu's versatility is what makes it so amazing! Which obviously means it's a great substitute for soy tofu!
Ingredients:
- Hemp 'tofu', mashed
- 1 finely chopped ginger root
- 1 shredded carrot
- 1 shredded zucchini
- half of a tomato, chopped
- small bunch of spinach
- 1 tsp cumin seeds
- turmeric
- coriander powder
- salt/pepper
- oil (sesame or coconut)
Preparation:
- Heat coconut or sesame oil in a pan.
- Add cumin seeds and some ginger.
- Once it cooks a little, add scrambled 'tofu' and spices (turmeric, coriander, salt, pepper).
- When 'tofu' gets dry add veggies (carrots, zucchini and tomato).
- You can add some water so it doesn't burn.
- Once veggies are soft turn the heat off and add spinach.
- Cover the pan and wait for 1-2 minutes for spinach to get soft.
- Garnish with fresh parsley and sunflower seeds.
Benefits of hemp:
- Hemp does not contain enzyme inhibitors and phytates and hence the nutrients in hemp can be easily absorbed by the body.
- Hemp seeds contain all the essential amino acids necessary to maintain healthy human life.
