Easy Vegan Stuffed Tomatoes

Sometimes when we eat too much of packaged and processed food, our body and taste buds start to crave something that’s simple and easy to digest.

Surprisingly, raw food does not have to be tasteless and bland. Here is a flavourful stuffed tomato recipe which is an easy snack and can be a fulfilling lunch as well.

Ingredients:

  • 2 fresh and organic tomatoes (serves 2 people)
  • 1/3rd cup of sun-dried tomatoes
  • 1 cup of sunflower seeds
  • 1 tbsp of nutritional yeast
  • 1 lime’s juice
  • Fresh ginger - small piece
  • Fresh dill - small bunch

Preparation:

  • Cut the tomatoes in half and keep the seeds aside
  • Soak the sun-dried tomatoes in water for 10 minutes
  • Blend all the ingredients, including the tomato seeds, until it becomes a creamy pulp
  • You may add some water if you want a thinner consistency
  • Stuff the half-cut tomatoes with the mixture and garnish with some fresh dill.
