Quinoa and Amaranth ‘Oatmeal’

Looking for a nourishing and gluten-free start to the day? Try this amazing Quinoa and Amaranth Oatmeal. Amaranth is a great grain with amazing medicinal benefits; it helps lower cholesterol and  strengthen your immune system. And the best part is that it is gluten-free.

It makes for a great hot cereal that you can top up with some dry fruits and almond milk. It is generally thick and sticky, allowing you the freedom to add water or milk according to your liking.

Ingredients:

  • 1/2 cup of quinoa
  • 1/2 cup of amaranth
  • 1/2 an organic apple - peeled and pitted
  • ½ an organic pear
  • 10 cashews - soaked overnight in water
  • Handful of raisins
  • Coconut Manna - You can find it in most organic wholefoods stores
  • Sunflower seeds
  • 3 cups of water

Preparation:

  • After washing the quinoa and amaranth, place them in the rice-cooker
  • Add cut apple, pear, cashews, raisins and 3 cups of water
  • Let it cook for around 15 - 20 mins
  • Fluff in between
  • Once done you can add a little bit of water to make the cereal a little bit mushy
  • Serve with coconut manna and roasted sunflower seeds
